recipe: blueberry and banana pancake

Banana pancakes are my favourite. They are not only a healthy and balanced option to kickstart your day after your yoga practice but they are also low gi so they keep you full for longer. 

It also reminds me of this song from Jack Johnson (and who doesn’t love Jack Johnson!!)



1 Banana

½ cup of almond milk 

4 tbsp wholemeal flour

cinnamon to taste

1 egg


Put all these ingredients in the food processor until you reach a smooth but thick batter.

Lightly grease a medium size pan with a small dash of coconut oil and heat to medium.

Pour a small batch of the mixture and smooth it out to form an even layer. Cook for a couple of minutes and flip over.

Serve with blueberries and honey.
